Homemade Potatoes Checo Style

- Preperation -

  • I cup of chopped boiled Potatoes with Salt
1. Chop the Checo Salami into squares then fry it in a hot pan with ½  tbs of the butter. 
  • 1 cup chopped Green Pepper
  • 1 cup chopped Onion
2. Once all is fried set aside
  • ½ tsp of Pepper
3. Mix the boiled potatoes with the Adobo 
  • 1 tbs of Adobo with Achiote
4. With the other ½ of the butter mix the green pepper, onion, potatoes and vinegar in a hot pan (cook for 2 minutes)
  • ½ cup chopped Cilantro
  • 1 tbs of Butter
[* Tip To make the potatoes more juicy, pour a little more butter]
  • ½ lb Checo Salami
5. Add the previously fried Checo Salami to the mix along with the cilantro.
  6. Serve and Enjoy
