Fried Meat Dish

Ingredients
  

  • 1 red onion (sliced)
  • 1 cup vinegar
  • 6 plantains (peeled and cut in 4)
  • 5 cups of water (to boil)
  • 6 tbsp butter
  • 2 cups of vegetable oil (divided)
  • 12 slices of frying cheese
  • 1 cup of flour
  • 18 slices of salami
  • Salt to taste

Instructions
 

  • Peel and slice onions into rings and in a separate bowl add the onions, salt and vinegar, let the onions soak for an hour.
  • Peel and cut plantains into 4 and place in a pot of 5 cups of water with salt and boil until soft, apx. 30 mins.
  • In a frying pan add enough oil to fry the cheese, bring the oil to about 350 degrees.
  • Dredge cheese slices in flour and directly to the sizzling hot pan. Cook until sides are golden brown and repeat until completed.
  • In another pan, fry the salami with little to no oil, cook until a nice color forms on the salami.
  • In that same sauce pan add 1 Tbsp of oil and cook the pre soaked onions, for about 3 mins.
  • Once the plantains are cooked, strain them and place in a wide bowl, reserve some water from the cookery.
  • Add butter and some of the water and mash until desired consistency. Add water as you go and not it all in one shot. Season with salt, onion powder, garlic powder, or how every you’d like.
  • Serve mangu with the onions, fried cheese, even a fried egg, but never forget the fried salami.
